Comfort Coconut Thai Yellow Curry With Chicken

A hearty homemade yellow curry paste simmered in coconut milk with a mixture of fresh veggies and tender chicken with rice.  It is a complete, delicious, and filling meal.  Mild spiciness.

This dish is inspired by the mother curries of Thailand that married Indian spices with Thai aromatics (like lime leaves, lemongrass, shallots, and Thai ginger).  This creates an incredible depth of flavour that has lasted for centuries.
